Putting the 'fine' in fine dining: Suresh Nanda's Sevilla Restaurant in-New DelhiSituated inside Suresh Nanda’s majestic The Claridges New Delhi, Sevilla offers a feast for the eyes and the taste buds alike.

Picture this: A sprawling Mediterranean eatery with an intimate indoor and outdoor seating amidst muted garden lights and lush foliage. Located in Lutyens Delhi is iconic hotel “The Claridges”, which houses an equally iconic restaurant inside its premises – Sevilla, that offers the choicest of Mediterranean delicacies from Italy, Spain, Romania, and Morocco.

To call Sevilla one of the most beautiful restaurant settings in the national capital would not be an exaggeration. At least that’s what we had heard from our fellow food lovers. The worst of the pandemic was over already, so we thought of giving Suresh Nanda's fabled restaurant a try. And boy, we were not disappointed!

To our surprise, Sevilla was serving authentic Roman cuisine the day we visited, and the food was prepared by none other than the culinary legend, Italian celebrity chef ChefPierluigiGallo. Chef Gallo has been a former pupil of Michelin star Chef Niko Romito, and comes from a family of restaurateurs’. To curate exquisite traditional Roman recipes that ooze with flavours is Chef Gallo's area of expertise.

Our meal at Suresh Nanda’s iconic restaurant started with the charming chef familiarizing us to the dishes on the menu for the day. The first dish that we tried was eggplant with tomato clear soup. The dish was light and yet delectable – the soup was made with green tomato extract and was flavoured with mint and basil.

The eggplant and the soup were soon followed by the starters, which consisted of a wide array of offerings. These included lamb tartar, truffle and grilled lamb mayonnaise, beetroot tartar with apple slice and yogurt, and beans, octopus and onion sorbet in a sweet and sour sauce. The octopus enticed us more, so we went ahead with it, and didn’t regret even a single bite of our choice.

Once we had relished on the starters, it was now time for us to move on to the main course, where there were two pasta dishes to choose from. There was spaghetti with green pesto, dehydrated lives and smoked anchovies, and there was the ricotta gnocchi with mint and cherry tomatoes comfit.

Both the options sounded too good to leave either out, so we decided to get us both. The ricotta gnocchi was served the first, and we were left mesmerized by its unique taste and texture. However, it was the spaghetti that really stole our hearts. The combination of pesto with anchovies was nothing short of magical.

The second set of offerings for the main course was even more interesting. We were to choose from Chilean Sea Bass, Lamb, Duck Breast and a vegetarian Spanish crepe. Since I had never tried Mediterranean style duck before, we decided to order duck breast. Glazed with a sweet-spicy apple and onion extract, the two large slices of duck breast that were served had their crispy skin intact.

The meat was cooked to perfection – every bite melted in mouth, leaving behind a long trail of authentic Mediterranean flavours. Served with a dash of almond ice cream and sour broccoli, the dish was nothing short of a culinary marvel. From the presentation to the texture and the taste – everything about the dish screamed perfection.

By the time we were done with the main course, we had had our fill. However, something felt to be missing. And very soon we found out what it was – dessert! To conclude our visit to Sevilla, we ordered a white chocolate panna-cotta topped with coconut macaroon bites and a tangy passion fruit reduction. To say that the dessert was heavenly would not be an understatement. And with that, our gastronomical extravaganza came to a sweet end!
